If you are hoping to enjoy a pancake feast on Shrove Tuesday but don't want to go completely wild with sugar, we have the healthiest recipe for great banana pancakes.

This recipe for banana pancakes is not only dairy and gluten-free, it's also extremely low in calories! Furthermore, it's high in protein and contains one of your five daily.

Ingredients: 

  • 2 ripe bananas
  • 2 eggs
  • 1 cup of oats (gluten-free)
  • Spoon of peanut butter

Method

Just blend it up! If you don't have a blender or hand mixer, mash up the ripe banana with the oats, eggs, and peanut butter in a bowl.

Spray your pan with a low-fat oil at medium heat or, for a fragrant touch, use coconut oil.

Pour batter onto the pan and give 20-30 seconds a side. That's it!

If you want to add more fruit to the mixture, you can pop a few blueberries into the batter once it has been mixed.

Serving suggestions:

These bad boys go well served with fruit and natural yoghurt, Nutella, more peanut butter or a small serving of maple syrup.
